Honey, Lime, and Mint Popsicles YIELDS: 8

WHAT YOU’LL NEED:

• 3–4 tablespoons honey
• 3/4 cup lime juice
• 2 1/4 cups water
• tiny pinch of salt
• 2 tablespoons fresh mint, sliced thin

WHAT YOU’LL DO:

  1. Pour honey, lime juice, water, and pinch of salt into a saucepan. Bring to a simmer, stirring until the honey is dissolved.

2. Pour mixture into popsicle molds and sprinkle mint leaves on top.

3. Place popsicle sticks in molds and freeze for at least 4 hours.

Honey, Strawberry, and Lemon Popsicles YIELDS: 8

WHAT YOU’LL NEED:

• 2 cups fresh strawberries, washed and stemmed—1/2 cup reserved and diced
• 1/2 cup fresh lemon juice
• 1/2 cup honey
• 1 cup water

WHAT YOU’LL DO:

  1. Place all ingredients except the 1/2 cup diced strawberries in a blender and mix on high until the strawberries are completely incorporated, about 1 minute.

2. Divide the diced strawberries among the popsicle molds and carefully pour the strawberry lemonade mixture to the top of each mold.

3. Insert the popsicle sticks in the molds and freeze for at least 4 hours.

Creamy Honey and Peach Popsicles YIELDS: 8

WHAT YOU’LL NEED:

• 1 pound ripe peaches (about 3 medium), peeled and sliced into 1/2″-wide wedges
• 6 tablespoons honey, divided
• dash sea salt
• 2 cups full-fat/whole milk plain yogurt (regular or Greek)
• 1 tablespoon lemon juice (about 1 small lemon)
• 1/2 teaspoon vanilla extract

WHAT YOU’LL DO:

  1. Preheat oven to 350° F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Transfer sliced peaches to the baking sheet and gently toss with 2 tablespoons honey and a dash of salt. Arrange the peaches in a single layer. Roast for 30 to 40 minutes, stirring halfway, or until the peaches are soft and juicy (watch the edges in particular).
  4. While the fruit is roasting, blend together the yogurt, 4 tablespoons honey, lemon juice, and vanilla extract in a medium bowl. Place the mixture in the refrigerator to keep cool.
  5. Let the peaches cool and then scrape the peaches and all of their juices into the bowl of yogurt. Use a big spoon to gently fold the mixture together.
  6. Transfer the yogurt blend into the popsicle molds. Insert popsicle sticks and freeze for at least 4 hours.
